Homemade Pancake Syrup

It was one of those days – Sunday morning, everything we needed for pancakes (including bacon and bananas!), but no maple syrup!

This syrup made a nice change from
Maple with it’s vanilla scent, and we have more tucked away for when we need it. This would also make a nice sticky syrup to soak into a vanilla or citrus fruit cake, like an orange or lemon cake.


Homemade Vanilla Pancake Syrup

1/2 cup sugar
1 cup firmly packed brown sugar
3/4 cup water
2 tsp vanilla – extract is fine, paste even better!
1 Tbsp butter

Boil together sugars and water in a pot until sugar is dissolved and it has a syrupy consistency. I used more water in my first go but it just meant boiling for longer to get it to evaporate.

Remove from heat and whisk in butter and vanilla.

Makes about 1 cup.
