Brandy Snaps

It’s that time of year!  If you’re wanting to get some Christmas Day desserts sorted early, why not try making your brandy snaps at home?  They’re actually really easy and taste delicious!

Brandy Snaps

55g butter
½ cup brown sugar
3 tbsp golden syrup
½ cup flour
½ tsp ground ginger
Melt together butter, golden syrup and brown sugar in a pot over medium heat.  Set aside to cool for a couple of minutes.  Stir in flour and ground ginger until combined.

Place teaspoonfuls on a tray lined with baking paper, leaving lots of room for spreading.  My roasting pan is only small so I baked them two at a time.

Brandy SnapsBake at 180C for about 5mins, until they’re bubbling and lacy.  If you take them out too soon they’ll just be a little softer in the middle which really doesn’t matter!  You’ll soon get the feel for them as you’re rolling.

Let the brandy snaps sit for a minute or two until they’ve firmed up enough to handle without breaking.  Roll each around a handle of a rolling pin/wooden spoon, etc.  and allow to set like that for about 2-3mins.  If your brandy snaps cool too much and won’t roll, just pop them back in the oven for a minute to soften again.
Makes about 10-12.  Store in an airtight container.
